Strawberry Passion Soup Ideal for a hot afternoon, try this contest-winner from iVillage member neibling as a refreshing first course or alongside a salad. Serving: 6 Prep Time: 25 minutes Cook Time: 20 minutes Total Time: 30 minutes 3 cups fresh strawberries, sliced 1/2 cup sugar 1/2 cup white grape juice 2 1/2 tablespoons cornstarch 1/2 cup passion fruit juice 1 tablespoon lime juice 1 cup plain non fat yogurt 1. Combine strawberries, sugar and white grape juice in a large bowl. Allow fruit mixture to stand for 3-4 hours. 2. Combine passion fruit juice and cornstarch. Drain liquid from strawberries, saving liquid. Transfer strawberries to refrigerator. 3. In a saucepan, combine liquid from strawberries, passion fruit mixture and lime juice. Bring to a boil. Reduce heat and cook, stirring constantly, until mixture is thick and clear. 4. Cool. Refrigerate at least 3 hours; stir in strawberries and yogurt. Serve chilled. Based on individual serving.
