Cioppino - South Beach Diet Recipe (Phase 1) 1 teaspoon olive oil 1 large vadalia onion, chopped 1 cup sliced celery, with celery tops 1 clove garlic, minced 4 cups water 1 fish flavor bouillon cube 1 tablespoon salt free Italian herb seasoning 1/4 pound any boneless mild flavored fish fillets, cod, white fish, talapia, etc.. 1/4 pound small shrimp, peeled and deveined 1/4 pound bay scallops 1 large tomato, chopped 1/4 cup crabmeat or lobster meat (or combination of) 1 can (10 ounces) baby clams, drained and rinsed 2 tablespoons fresh lemon juice Heat olive oil in large saucepan over medium heat until hot. Add onion, celery and garlic. Cook and stir 5 minutes or until onion is tender. Add water, bouillon cube and Italian seasoning. Cover and bring to a boil over high heat. Cut fillets into 1/2 inch pieces. Add fish, shrimp, scallops and tomato to saucepan. Reduce heat to medium low; simmer 10 to 15 minutes or until seafood is opaque. Add crabmeat, lobster, clams and lemon juice. Heat through.
