Chilled Minted Cucumber Honeydew Soup - South Beach Diet Recipe (Phase 2)

Chilled Minted Cucumber Honeydew Soup

serves: 4


1 English cucumber
2 Cups honeydew pieces ( from about 1/4 medium melon)
8 oz plain non-fat yogurt
1/4 cup mint leaves
2 T fresh lime juice

Garnish: 4 fresh mint leaves


Cut cucumber into 1-inch pieces. In a bowl, combine cucumber, honeydew, yogurt, mint leaves and juice.

In a food processor or blender, puree mixture in batches for 30 seconds, and transfer to a large bowl.

Season soup with salt and pepper. Chill soup, covered, at least 2 hours and up tp 6 hours.

Garnish each bowl with mint.
